Chocolate Chip Cookies

Its cookies you always need to have some in hand, either for warm cookies when surprise guests arrive or when you just get the munchies. This recipe makes an instant batch (12) and freezer batch too!

Ingredients

50g soft brown sugar

50g caster sugar (vanilla sugar best)

125g butter I use salted ( most recipes desire unsalted)

1 egg lightly whisked

1 tsp vanilla paste

1/2 tsp salt ( if using unsalted butter)

225g Self Raising Flour

200g chocolate drops ( I use callebaut 54% minimum) or I recommend Willies Cacao Chocolate

Equipment

Baking sheet and greaseproof

Mixer ( or bowl and spoon!)

Fork or whisk for the egg

Cling film

How to

  1. Mix the butter and sugar togetherI personally mix for about 5 minutes you get a better cookie(You can if you can't wait and really do want a super fast cookie put all ingredients together and mix )

  2. Add the egg , flour and chocolate and mix ( remember to scrape the sides and bottom of the mixer bowl if using to blend thoroughly

  3. Split mixture into 2 portions

  4. With half the mixture make 12 cookies. Roll into sausage shape and cut into discs.

  5. Place on baking sheet with greaseproof about 1/2cm apart so they can spread a little

  6. Put in the oven and bake for 10 minutes

  7. With the remaining half put cling film out and place mixture on , roll into a sausage shape and pop in freezer for instant cookies whenever you want - just slice when you need and bake
